This June, Nobu Kuala Lumpur unveils its latest culinary innovation, the Japanese Five Senses menu; a 16-item gastronomic showcase that celebrates flavour, sustainability, and creativity in equal measure. Crafted to awaken each of the five primary taste profiles – salty, sour, umami, bitter, and sweet – the menu invites guests on a vibrant sensory journey, with five cold dishes, ten hot dishes, and one dessert designed to excite the palate.

Staying true to Nobu’s commitment to conscious dining, the menu champions low-waste techniques and ingredient maximisation, transforming overlooked elements into culinary highlights. A portion of the menu proceeds will also be donated to Food Bank Malaysia in support of the fight against food insecurity.

“This menu is a tribute to both flavour and responsibility,” said Chef Philip Leong, Executive Chef at Nobu Kuala Lumpur. “Our team had an incredible time reimagining how we could push culinary creativity while reducing waste; using whole ingredients, extracting every bit of flavour, and turning often-discarded parts into the stars of the show. It’s not just about dining well, but dining consciously. I’m also incredibly grateful to our brilliant team of chefs, whose creativity and dedication brought this unique menu to life.”

The journey through the senses begins with salty, represented by the decadent Toro Tartare with Caviar, where the richness of finely chopped toro is elevated by the briny pop of luxurious and savoury caviar. For sour, the Whitefish Tiradito Roll offers six delicate pieces layered with shiso leaf, bright lemon juice, and rocoto chillis, brought together by a refreshing yuzu-lemon sauce – a zesty bite balanced with herbaceous notes.

Umami is defined by the Umami Seabass dish, where flaky, sustainably sourced seabass is roasted to perfection and delicately seasoned with soy salt to draw out its natural depth, simplicity, and complexity in equal measure. The Chuka Innaniwa Lobster Bisque brings a bright, bitter smile to life through a velvety broth made from slow-roasted lobster shells, poured over silky Japanese noodles, and topped with king crab, shaved kombu, and caviar for a refined edge.

Finally, sweet arrives in the form of the Bergamot Cream Brownies, where floral citrus is folded into a bergamot cream, layered with dark chocolate foam and caramel miso; a truly indulgent end to a sensory dining experience.

In crafting this menu, the Nobu team not only aims to stimulate each of the five palate senses through a whirlwind of jumping flavours, but also to create a mindful dining experience that embraces purpose, innovation, and flavour.
