Thanks for the wonderful invitation, I recently went to Spice Garden at The LINC Kuala Lumpur to sample some of their signature dishes such as Khazana Biryani, Seabass 65, Venison Kebab, Tandoori Chicken, Butter Chicken and Palak Paneer.

Established in 2003 with its first restaurant in Genting Highlands, Spice Garden is a well-known semi-fine dining restaurant, serving authentic Indian and Middle-Eastern cuisine that is popular with residents and expatriates living in and around the Klang Valley, as well as tourists.

The restaurant serves a wide variety of tantalizing dishes, crafted using time-tested traditional recipes that blends fresh spices and herbs from India and cooked to perfection, mostly through a “tandoor” which is a barrel-shaped open top clay oven that is fired by charcoals.

Kneaded with herbs, spices, and your selection of minced meat, the kebab at Spice Garden is skewed and grilled to perfection in the natural charcoal flames approaching 400 degree Celsius. We tried the Venison Kebab (RM55), a mouth-watering dish that is simply irresistible for its enticing aroma and the retained juiciness within the meat. The menu also offers chicken, mutton, and mixed vegetables for selection.

Grilled to brownish perfection on the outer layer, and yet retaining the juiciness of the meat from within, Tandoori Chicken is one of my favourite dishes in Indian cuisine. Do you know that tandoori marination is an old form of barbeque recipe, blending different types of herbs and spices to create appetizing aroma of the meats that are spiced up with high heat of tandoor. Besides chicken, you can also enjoy Tandoori Salmon, Seabass, Red Snapper, Dory, Paneer, and Broccoli at Spice Garden.

You must try the Chef’s Special Khazana Biryani here. What sets it apart from the normal biryani is its unique way of cooking created by Chef Bharat. One of the major challenges of cooking biryani in the tandoor is controlling the heat distribution to cook the rice evenly, where the lower portion could be over-cooked while the upper part remains under-cooked.

Chef Bharat cooks the biryani with a unique whole wheat bread wrap that allows the charcoal heat to be evenly distributed, allowing the flavour and aroma of the herbs and spices spread thoroughly on the rice and meat. The captured heat within the bread wrap also retains the natural moist of the meat, making its texture juicy and succulent. The selection is great too, you can choose to have mutton, chicken, venison, fish, prawn, salmon or mixed vegetables.

For those who prefer super spicy flavour, Kebab 65, originated from the coastal area of Southern India would be a great choice. Spiced up with chilli, curry leaves, essential herbs and spices, this dish will surely give your taste buds a tantalising stimulation. Besides the Sea Bass that we tried, you can enjoy it with squid, prawn, softshell crab, dory, salmon, lobster, red snapper, crab, meat, and vegetables.

“We cook our dishes using centuries old recipes and techniques that are indispensable to the preparation of truly authentic Indian cuisines,” said Chef Bharat Batra, who is also a director at Focus 88 Sdn Bhd, the company that owns and operates Spice Garden restaurants.

“What makes our dishes even more special is that we only use original spices and herbs without artificial flavouring, colouring or preservatives. The dishes at Spice Garden are all freshly cooked and not reheated which can cause it to become oily.” added Chef Bharat, who was trained in the field of hotel management in Switzerland.

Started its business over 16 years ago, Spice Garden currently has 4 outlets in the country. The restaurant also offers catering services for weddings, birthdays and other events.
