Spain is well known in the wine industry for producing some of the world’s finest wines. Popular for its sparkling wines, Spanish wineries use the method champenoise, champagne method, to produce some of the most exquisite Cavas.

In 1872, Josep Raventos from the Codorniu Winery created the first 3,000 bottles of Cava following traditional methods making it the first brand of Cava (at that time called Champagne Codorniu) ever introduced in the market.

The first impression in the glass is of practically no oxidation with bright yellow-green hues. The foam is dense and persistent, providing an inkling of its structure in the mouth. Looking at the centre of the glass we can see a uniform line of microscopic bubbles rising to the surface.

The nose is dominated by tangy fruit and floral aroma. In the background, fermentative notes of honey, vanilla and liqueur can be traced from the wine’s transformation in the bottle.

Honeyed yet fresh in the mouth, thanks to its significant acidity. The combination of fruit, acidity and fine lees results in a surprising sensation of fullness that invites one to continue tasting it. The fruity notes return in the aftertaste, with predominant spices that, for several seconds, leave a very pleasant memory.

The Cava is excellent for drinking straight away. In addition, the characteristics of the grapes provide it with great ageing potential.

2. Noche y Dia Cava Yellow Label Brut Nature

It has a fine persistent mousse that unfolds citrus notes and nuances of tropical fruit intermingled with complex aromas from aging and brioche. A creamy, broad and lingering mouthfeel. Its variety makes it a very culinary cava that is ideal for serving with a meal from start to finish; first courses, stir fried vegetables, fish, seafood, grilled meats, desserts and etc, the most versatile glass.

In 2010, Miguel Torres Chile enologist Fernando Almeda and his team took charge of the project choosing to use the traditional method and the same process of in bottle second fermentation used in the elaboration of Champagne to work with the raw materials.

In this manner a unique sparkling wine was born, 100% Chilean and obtained from 100 years old grapevines, a reward for the land and its people.

The Raventos i Blanc estate, 90 hectares of woodland and vineyards in Sant Sadurni d’Anoia, has belonged to the Raventos family since 1497, and been passed on intact from generation to generation up to the present day.

In 1872, Josep Raventos Fatjo made the first sparkling wine second fermentation in the bottle wine grapes from our estate. Since then, every generation has dedicated itself to vine growing and to make fine sparkling wines. A unique new project was conceived to give meaning to this estate, this unrepeatable terroir – Raventos i Blanc. When Josep Maria Raventos i Blanc and his son Manuel Raventos decided to found this winery at the centre of their historic estate in 1984, their dream of creating a premier global brand became an obsession.

There can be no doubt that it was the fruit of a great passion.

With the aim of paying homage to Conchi, a woman who loved French sparkling wines, the Cava is a tribute to women around the world.

A careful selection of vineyards in the heart of Catalunya, protected by the mountain of Montserrat, has been the main focus for the production of Villa Conchi. Cava aims to present a fresher style from Mediterranean climate – the altitude of the plots has the crucial advantage of cooler temperatures during the night which help us obtain grapes with a pleasant acidity. Plus, using the Chardonnay variety in the blend will bring more fruity and elegant notes.
