Thanks to the wonderful invitation, I recently went to Pak Loh Chiu Chow at Starhill Gallery to sample some new Chiu Chow dishes prepared by Chef Alex Au, who recently named as one of the Asia’s Top 20 Chefs.

Established in 1967, Pak Loh Chiu Chow in Hong Kong has long since forged a name for itself, uncompromising on authentic high-end Teochew cuisine. Reputed for serving the most authentic Teochew cuisine, Pak Loh Chiu Chow delivers a wealth of delicious flavors associated with China’s gastronomical capital of Guangdong province.

Born and bred in Hong Kong, Chef Alex Au is the Executive Chinese Chef for Pak Loh Chiu Chow at Feast Village in Starhill Gallery, which is the ‘golden sister’ of the world renowned Pak Loh Chiu Chow restaurant in Hong Kong.

Chef Alex joined Hong Kong’s famous Pak Loh Chiu Chow restaurant 16 years ago where he learned the ropes from famous Master Chef Chan Tung. Taking what he learned, he has, with much practice, distinguished himself in the art of preparing the famous Chiu Chow cuisine.

Authentic Top Shell with Preserved Vegetables (RM108)

Another signature dish in Teochew cuisine especially during the banquet, chef stir fried the premium top shell together with onions, scallions, red pepper and preserved mustard, resulting in a luscious dish with myriads of texture and flavor that will leave you craving for more.

Authentic Smoked Bacon Cooked with Yellow Chives (RM45)

Pride in using only the finest ingredients, condiments and culinary method in its cuisine, Chef Alex continues to wow us with this fragrant porky dish, where the heavenly pork belly was tea-smoked first before stir-fried together with crunchy yellow chives in high heat to create the perfect combination for a satisfying dish.

Classic Chiu Chow Assorted Seasonal Vegetables (RM32)

Served as an auspicious festive dish during the 7th day of Chinese Lunar New Year, this crunchy refreshing classic vegetarian dish features 7 types of ingredients that rhyme with prosperous word, including lotus, carrot, celery, black fungus, parsley, leek, spinach and onion.

*****

Braised Pumpkin Bean Curd (RM42)

With impressive culinary flair, Chef Alex made this pumpkin bean curd himself with the right portion of pumpkin and soya milk without using any preservative and setting agents. Braised together with wild mushrooms and dried scallop, I truly enjoyed the texture of these attractively presented nutritious pumpkin bean curd.

Authentic Crispy Bananas with Golden Cream (RM24)

Our Teochew culinary experience ended perfectly with the golden deep fried banana fritters that coated with chef’s special concoction of 5 different flours to create that light and crispy texture.
