Chef Ridzwan Rasit from Hilton Kuala Lumpur is the new ‘Lambassador’ who joined a delegation of 16 renowned chefs from 12 countries, including Japan, the USA, China, and Saudi Arabia, for an immersive week in Australia exploring the country’s premium lamb industry.

Co-hosted by Meat & Livestock Australia (MLA) and the Victorian Government, this global culinary experience highlighted the exceptional quality of Australian lamb and its strong international reputation.

The Lambassador Program has brought together some of the world’s top chefs, who have embarked on a week-long journey through Victoria, visiting lamb farms, processing facilities, and culinary hotspots. The delegation experienced first-hand the expertise of local producers, the sustainability of Victoria’s agricultural practices, and the quality of Australian lamb that has made it a global leader in red meat.

This program highlighted the foundation of MLA partnership with the Victorian Government in promoting Australian lamb to the world. Throughout the week, the chefs participated in workshops, butchery demonstrations, and met world renowned Yarra Valley producers. The program also provided opportunities for the chefs to meet local industry leaders, deepening their understanding of Australia’s world-class lamb supply chain and culinary innovation.

On January 15, 2025, Executive Sous Chef Ridzwan Rasit captivated an audience of approximately 40 invited chefs, media, and influencers as he shared his culinary journey with Australian lamb. The highlight of the event was a live cooking demonstration of Lamb Neck Asam Pedas, where Chef Ridzwan showcased his innovative approach to blending premium Australian lamb with bold local flavors.

During the demonstration, Chef Ridzwan provided valuable insights into the art of working with lamb, including proper handling techniques, the perfect seasoning to enhance its flavor, and how different cooking methods impact the meat’s texture. His expertise and passion for culinary innovation left guests inspired and eager to explore new possibilities with the said protein.

Guests also enjoyed a specially curated menu for the event, including Boneless Lamb Leg Shish Kebab with condiments, Lamb Flap Kabsa, Biryani Rice, and Lamb Meatballs, highlighting Chef Ridzwan’s creativity and mastery in crafting dishes that celebrate both tradition and innovation.

As MLA’s produce is Halal certified, these curated dishes will also be part of Vasco’s signature Ramadan highlights that will be launched from 1-30 March 2025, available 6:30 pm – 10:30 pm priced at RM238 nett per adult and RM119 nett per child (children 5 years of age and below eat for free).
