Thanks to the wonderful invitation, I recently went to HOPP Cafe for Cat & The Fiddle’s premium cheesecake sampling event.

Offering premium cheesecakes in 15 original flavors, Cat & The Fiddle is the first online specialist cheesecake store in Singapore, specially created by Daniel Tay, Singapore’s iconic dessert chef.

Trained in the art of classical French pastry and dessert making, Chef Daniel Tay is one of the most well-known names in luxury desserts in Singapore. He has worked with the legendary gourmet food retailer Fauchon of Paris, and was the Pastry Chef of the famed gastronomic French restaurant, Les Amis in Singapore. Chef Tay’s skill and artistry has garnered him a gallery of awards including Finalist at World Gourmet Summit (2002-2006), Pastry Chef of the Year (2001) and World Pastry Cup Gold Medal (1996).

My personal favorite would be the Over the Moon (RM99), a fully-baked New York Cheesecake which is rich with smooth cream cheese and enriched with vanilla beans, with delicious golden crust underneath and at the side wall. The cute top design is made from chocolate powder.

Using fresh mango cubes as the main ingredients, The Russian Whiskers (RM99) is a non-baked Mango Cheesecake with rich cream cheese, finger biscuit and white curl chocolate chips fully covered the side wall. The top thick layer of nature mango puree gives a nice moist sweet sourish flavor that I like so much.

The smoothness of rich cheese with the combination of Oreo cookies make The Modern Duke’s Pudding (RM99) a big favorite especially to the kids. It is a fully-baked Oreo Cheesecake with crunchy Oreo cookie crumble underneath as well as a thick layer on top.

Naughty and Nice (RM119), a devilishly sinful non-baked Chocolate Cheesecake layered with rich premium couverture chocolate mousse, topped off with pillows of fluffy sponge.

For durian lovers, make sure you try the King Cat of the Mountain (RM139), a non-baked creamy Musang King Cheesecake arresting facade crowned with cubes of soft sponge with its dreamy innards of durian sponge cake and durian-studded cream cheese.

Newly launched in early November, this Milo Dinosaur (RM119) reminds me of my fun childhood, a Cream Cheesecake loaded with Milo powder, then topped with another decadent heap of Milo powder.

Cat & The Fiddle also has a fully-baked Strawberry Cheesecake named Queen of Hearts (RM99), with golden crust underneath and at the side wall, topped with a thick layer of nature strawberry and raspberry puree.
